Ingredients:

  • Chicken Pieces: 4 (thighs or breasts, as preferred)
  • Manuka Honey: 1/4 cup
  • Fresh Lemon Juice: 3 tablespoons
  • Olive Oil: 2 tablespoons
  • Garlic: 4 cloves, minced
  • Lemon Zest: 1 tablespoon, grated
  • Fresh Rosemary: 1 tablespoon, chopped
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Fresh Thyme: 1 teaspoon, chopped (optional, for garnish)
  • Lemon Slices: For garnish

 

Instructions:

Prepare the Marinade: In a large bowl, combine the Manuka honey, fresh lemon juice, olive oil, minced garlic, grated lemon zest, and chopped rosemary. Add the salt and pepper, and mix well.

Marinate the Chicken: Place the chicken pieces in a large resealable plastic bag or a glass dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.

Preheat the Oven: Preheat the oven to 400°F (200°C).

Roast the Chicken: Place the marinated chicken in a baking dish or a roasting pan. Pour the remaining marinade over the chicken. Roast the chicken in the preheated oven for 35-40 minutes, or until fully cooked and the juices run clear when pierced with a fork. If you have a meat thermometer, the internal temperature should reach at least 165°F (75°C).

Prepare the Honey Lemon Sauce: While the chicken is roasting, transfer the remaining marinade to a small saucepan and bring it to a boil over medium heat. Reduce the heat and simmer for 5 minutes or until slightly thickened.

Glaze the Chicken: Once the chicken is done, remove it from the oven and brush it with the thickened sauce. Garnish with lemon slices and chopped thyme if using.

Serve: Serve the roasted chicken immediately with the remaining sauce on the side.
