Brown-Sugar-Honey-Glazed-Carrots-Featured

Ingredients:

  • Carrots: 1 pound (450g), peeled and cut into sticks or left whole if baby carrots
  • Red Gum Honey: 3 tablespoons
  • Butter: 2 tablespoons
  • Fresh Orange Juice: 2 tablespoons
  • Orange Zest: 1 teaspoon
  • Fresh Thyme: 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
  • Salt: 1/2 teaspoon
  • Ground Black Pepper: 1/4 teaspoon
  • Fresh Parsley: 1 tablespoon, chopped (optional, for garnish)


Instructions:

Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Glaze:
In a small saucepan over low heat, melt the butter. Stir in the red gum honey, fresh orange juice, orange zest, and chopped thyme. Cook until the mixture is well combined and slightly thickened, about 2-3 minutes. Remove from heat.

Prepare the Carrots:
Place the carrots in a large mixing bowl. Pour the honey glaze over the carrots and toss to coat evenly. Season with salt and ground black pepper.

Roast the Carrots:
Spread the glazed carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through to ensure even cooking.

Serve:
Transfer the roasted carrots to a serving dish. Garnish with chopped fresh parsley if desired, and serve warm.
