Ingredients:

  • Carrots: 2, peeled and cut into 1-inch pieces
  • Parsnips: 2, peeled and cut into 1-inch pieces
  • Sweet Potatoes: 2, peeled and cut into 1-inch cubes
  • Red Onions: 1, cut into wedges
  • Beets: 2, peeled and cut into 1-inch pieces
  • Wandoo honey: 1/4 cup
  • Olive Oil: 3 tablespoons
  • Fresh Thyme: 1 tablespoon, chopped (or 1 teaspoon dried thyme)
  • Fresh Rosemary: 1 tablespoon, chopped (or 1 teaspoon dried rosemary)
  • Salt: 1 teaspoon
  • Black Pepper: 1/2 teaspoon
  • Fresh Parsley: 2 tablespoons, chopped (optional, for garnish)

 

Instructions:

Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Prepare the Vegetables:
In a large mixing bowl, combine the carrots, parsnips, sweet potatoes, red onions, and beets.

Make the Honey Glaze:
In a small bowl, whisk together Wandoo honey, olive oil, chopped fresh thyme, chopped fresh rosemary, salt, and black pepper until well combined.

Coat the Vegetables:
Pour the honey glaze over the mixed vegetables. Toss well to ensure all the vegetables are evenly coated with the glaze.

Roast the Vegetables:
Spread the glazed vegetables in a single layer on the prepared baking sheet. Avoid overcrowding for even roasting. Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and caramelized, stirring once halfway through.

Transfer the roasted vegetables to a serving dish. Garnish with chopped fresh parsley if desired, and serve warm.
